Spinach quiche with ham: recipe preparation
The quiche is a delicious cake and very easy to prepare. It is usually made with cream (cream of milk), but it is a little caloric. For this reason I decided today to cook a quiche a little lighter than usual. This quiche, is very low fat because it is made with evaporated milk and instead of bacon or bacon, I have preferred to add mountain ham with hardly any fat. The result is a very tasty cake, very colorful and with an extremely rich flavor.
I’m not going to tell you that if you’re on a diet you’ll swell to eat this quiche, it’s still carrying broken dough and that means a good amount of butter, but the amount of dough that is ingested with a piece of this pie is not too much and will serve you To give you that little whim that we all fancy when we are on a diet.

- 1 base of cracked dough or breeze
- 2 eggs
- 250 ml of evaporated milk
- 250 g cooked spinach
- 75 g of serrano ham
- 100 g grated cheese
- 40 g cornstarch

Spread the crumbled dough and place it in a greased quiche pan. Adapt the base and edges well to the mold. Pin the dough with a fork to prevent it from inflating. Cover the mold with baking paper or aluminum foil and place beans or chickpeas on a weight basis. Bake at medium height with the oven preheated to 200º C, with heat up and down. After fifteen to 20 minutes, take it out of the oven and remove the paper with the vegetables and reserve.
Step by step to prepare spinach quiche with ham
Saltear the spinach in a frying pan with olive oil. Season with salt to taste. After 3 or 4 minutes, you can remove them from the fire and reserve.
Peel the eggs in a bowl and lightly beat them. Add the evaporated milk, the cornstarch and beat until it is completely integrated. Garnish with pepper and nutmeg. In the video I forgot and it is very rich without them. Incorporate grated cheese and ham and reserve a small amount of both ingredients for the final decoration. Remove everything and pour it into the batter you have reserved. Add the spinach and top with the dough. Cover with the cheese and ham that you had reserved and take it to the oven.
Bake for 25 minutes at 200º Cat medium height with heat up and down. Click with a skewer stick to check that it has completely set. If it does not brown, give it a few minutes of gratin until it has the desired color. Once golden, remove from the oven, let it quench and demold.
